Servings: 2–3 people

Ingredients

  • 250 g chicken breast, diced
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 clove garlic, minced
  • 1/2 canned peach, diced
  • 1 tbsp honey
  • 2 tbsp ketjap (sweet soy sauce)
  • 1 tsp paprika powder
  • 70 g tomato paste (1 small can)
  • Salt and pepper, to taste
  • Olive oil, a splash
  • 150 g basmati rice

Instructions

  1. Cook the basmati rice according to package instructions.
  2. Heat olive oil in a pan. Sauté onion and garlic until soft.
  3. Add chicken and cook until browned.
  4. Stir in both peppers and cook a few minutes.
  5. Add tomato paste, paprika powder, honey, ketjap, peach, salt and pepper. Mix well and simmer briefly.
  6. Serve the chicken mixture over the rice.
