Servings: 4–5 waffles
Ingredients
- 220 g all-purpose flour
- 1 tbsp baking powder
- 2 tbsp sugar (optional)
- Pinch of salt
- 2 eggs
- 350–400 ml milk
- 60 ml sunflower oil
- 1 tsp vanilla extract (optional)
- 250 g mascarpone
- 1–2 tbsp vanilla sugar
- 1 large ripe mango, peeled
Instructions
- Preheat the waffle iron to medium-high and lightly oil it.
- Whisk flour, baking powder, sugar and salt.
- Whisk eggs, milk, oil and vanilla; add to the dry ingredients and mix until smooth.
- Cook each waffle for 4–5 minutes, until golden and crisp.
- Fold mascarpone with vanilla sugar. Pulse the mango in a blender into small chunks/purée.
- Serve waffles topped with the vanilla mascarpone and mango.
