Servings: 4–5 waffles

Ingredients

  • 220 g all-purpose flour
  • 1 tbsp baking powder
  • 2 tbsp sugar (optional)
  • Pinch of salt
  • 2 eggs
  • 350–400 ml milk
  • 60 ml sunflower oil
  • 1 tsp vanilla extract (optional)
  • 250 g mascarpone
  • 1–2 tbsp vanilla sugar
  • 1 large ripe mango, peeled

Instructions

  1. Preheat the waffle iron to medium-high and lightly oil it.
  2. Whisk flour, baking powder, sugar and salt.
  3. Whisk eggs, milk, oil and vanilla; add to the dry ingredients and mix until smooth.
  4. Cook each waffle for 4–5 minutes, until golden and crisp.
  5. Fold mascarpone with vanilla sugar. Pulse the mango in a blender into small chunks/purée.
  6. Serve waffles topped with the vanilla mascarpone and mango.
