Ingredients:
- 1 baguette, sliced into 1/2-inch thick slices
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1 cup ricotta cheese, seasoned with salt and pepper to taste
- 1 cup roasted red peppers from a can, drained and sliced
- Salt and freshly ground black pepper, to taste
- Fresh herbs (such as basil or thyme), for garnish (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- Arrange the baguette slices on a baking sheet in a single layer. Brush each slice lightly with extra virgin olive oil on both sides.
- Bake in the preheated oven for 10-15 minutes, or until golden brown and crispy. Remove from oven and allow to cool slightly.
- In a small bowl, mix ricotta cheese until smooth. Season with salt and pepper to taste.
- Spread a generous layer of ricotta on each toasted bread slice.
- Top with a few slices of roasted red pepper.
- Season with more salt and pepper, if desired, and drizzle with a bit more olive oil. Garnish with fresh herbs if using.
- Serve immediately.
