Chicken Pastel with Pulled Chicken Recipe:

  • 1 package puff pastry dough (bladerdeeg)
  • 300 grams boneless chicken breast
  • 1 small onion, finely chopped
  • 1 clove garlic, finely chopped and crushed
  • 1 small tomato, peeled and finely chopped
  • 1 teaspoon olive oil
  • A handful of cheiro-verde (parsley and chives), finely chopped
  • 1 small can of corn
  • 1 small can of tomato sauce (50 gram soffrito)
  • 1 teaspoon wheat flour
  • 1 chicken bouillon cube
  • A handful of olives, finely chopped
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Cook the chicken breast until fully done in half a cup of water and add the bouilloncube for about 15 minutes.  Once cooked, either shred it with forks to create a pulled texture or lightly pulse it in a blender for a finer consistency. Set aside.
  2. In a saucepan, heat the olive oil over medium heat. Add the onion and garlic, sautéing until they become translucent.
  3. Add the pulled or blended chicken, chopped tomato, cheiro-verde, corn, and olives to the saucepan. Mix well.
  4. If the mixture is too liquid, add a small amount of flour. Stir continuously until the mixture thickens.
  5. Let the filling cool slightly before assembling the pastries.
  6. Preheat your oven to 225°C (437°F).
  7. If using a pastry maker, unfreeze the puff pastry dough and cut it into shapes that fit your pastry maker. Place a spoonful of the chicken filling in each cut-out dough piece.
  8. Fold over to enclose the filling, and press to seal. If your pastry maker seals the edges, you can place the filled pastries directly in it for this step.
  9. Brush the top of each pastry with the remaining beaten egg to give it a golden and shiny finish.
  10. Place the pastries on a baking sheet lined with parchment paper and bake in the preheated oven for about 15 minutes, or until they are golden brown and puffed up.
  11. Allow the pastries to cool slightly before serving. They can be enjoyed as is or with a side of extra tomato sauce for dipping.
