Salmon with Saffron Sauce

Ingredients

  • 4 salmon fillets (500 g)
  • 75 grams butter
  • 2 shallots (chopped)
  • 1 envelope saffron
  • 100 milliliters dry white wine
  • 200 milliliters cooking cream
  • 1 tablespoon olive oil

Instructions

  1. Heat 1 tablespoon of butter in a saucepan and sauté the shallots.
  2. Crush the saffron and mix it with 1 tablespoon of hot water.
  3. Add the wine to the shallots and let it reduce for 1 minute.
  4. Stir in the saffron mixture, cooking cream, salt, and pepper, and let it simmer gently for 12 minutes.
  5. Heat 2 tablespoons of butter in a pan and cook the salmon for 2 minutes on each side.
  6. Whisk the remaining butter into the saffron sauce until the sauce is smooth and slightly thickened.
  7. Serve the salmon and drizzle with the saffron sauce.
