Salmon with Saffron Sauce
Ingredients
- 4 salmon fillets (500 g)
- 75 grams butter
- 2 shallots (chopped)
- 1 envelope saffron
- 100 milliliters dry white wine
- 200 milliliters cooking cream
- 1 tablespoon olive oil
Instructions
- Heat 1 tablespoon of butter in a saucepan and sauté the shallots.
- Crush the saffron and mix it with 1 tablespoon of hot water.
- Add the wine to the shallots and let it reduce for 1 minute.
- Stir in the saffron mixture, cooking cream, salt, and pepper, and let it simmer gently for 12 minutes.
- Heat 2 tablespoons of butter in a pan and cook the salmon for 2 minutes on each side.
- Whisk the remaining butter into the saffron sauce until the sauce is smooth and slightly thickened.
- Serve the salmon and drizzle with the saffron sauce.
