Quesadillas
Ingredients
- Tortilla
- Filling:
- 1 can tuna
- 1 small can corn
- Handful of coriander
- 4 tbs of mayonnaise
- 2 tbs of olive oil
- Salt
- Pepper
- 1 cup of grated cheese
Instructions
- In a bowl, combine the tuna, corn, chopped coriander, mayonnaise, olive oil, salt, and pepper. Mix well.
- Heat a non-stick skillet over medium heat. Or in a toaster.
- Place a tortilla in the skillet and spread the filling mixture evenly over half of the tortilla.
- Sprinkle grated cheese over the filling.
- Fold the tortilla in half and cook until the bottom is golden brown and the cheese is melted, about 2-3 minutes.
- Flip the quesadilla and cook the other side for an additional 2-3 minutes, or until golden brown.
- Remove from the skillet and let it cool slightly before cutting into wedges.
- Serve warm and enjoy!
