Quesadillas

Ingredients

  • Tortilla
  • Filling:
    • 1 can tuna
    • 1 small can corn
    • Handful of coriander
    • 4 tbs of mayonnaise
    • 2 tbs of olive oil
    • Salt
    • Pepper
    • 1 cup of grated cheese

Instructions

  1. In a bowl, combine the tuna, corn, chopped coriander, mayonnaise, olive oil, salt, and pepper. Mix well.
  2. Heat a non-stick skillet over medium heat. Or in a toaster.
  3. Place a tortilla in the skillet and spread the filling mixture evenly over half of the tortilla.
  4. Sprinkle grated cheese over the filling.
  5. Fold the tortilla in half and cook until the bottom is golden brown and the cheese is melted, about 2-3 minutes.
  6. Flip the quesadilla and cook the other side for an additional 2-3 minutes, or until golden brown.
  7. Remove from the skillet and let it cool slightly before cutting into wedges.
  8. Serve warm and enjoy!
